In the oven and smelling great!

WooHoo Bayou Fish Pack from Hungry Girl

PER SERVING (1/2 of recipe, 1 fillet with seasoned beans): 270 calories, 2g fat, 592mg sodium, 32.5g carbs, 9.5g fiber, 8g sugars, 31g protein -- POINTS® value 5*

This slightly spicy fish dish will rock your face off!!!

Ingredients:
1 cup canned red kidney beans, drained and rinsed
1/2 cup finely chopped green bell pepper
1/2 cup finely chopped onion
1/2 cup finely chopped celery
1/4 cup tomato paste
1/2 tsp. Cajun seasoning, divided
1/2 tsp. chopped garlic
1/8 tsp. ground thyme
1/8 tsp. salt
1/8 tsp. black pepper
Two 4-oz. raw flounder fillets
Optional: hot sauce

Directions:
Preheat oven to 350 degrees. Place beans, bell pepper, onion, and celery in a bowl. Mix well and set aside.

In a small bowl, combine tomato paste with 1/4 tsp. Cajun seasoning. Add garlic, thyme, salt, and black pepper, and mix thoroughly. Transfer seasoned tomato paste to the bean-veggie mixture, and stir to coat. Set aside.

Lay a large piece of heavy-duty foil on a baking sheet and spray with nonstick spray. Scoop seasoned bean-veggie mixture into the center of the foil, and spread it out a bit. Evenly sprinkle remaining 1/4 tsp. Cajun seasoning on both sides of each fillet, and lay the fillets side by side on top of the bean-veggie mixture.

Place another large piece of foil over the whole thing. Fold together and seal all four edges of the two foil pieces, forming a well-sealed packet.

Bake in the oven for 20 minutes, or until the fillets are cooked through and the veggies are tender. Cut packet to release steam before opening it entirely. (Careful -- steam will be hot.)

Serve each fillet with half of the bean-veggie mixture. If you like, add a little hot sauce. Enjoy!

Halloween Table Redux

I looked high and low for the black and white checked plates for my Halloween table. I had given up finding them. When I was looking around at TJ Maxx, there were my plates. I really like the difference they made in my table. The original post is here.

Front Door Update

Several weeks ago, someone showed photos of their white front door and remarked that it just blended into the white of the siding on the house. I immediately went outside and took a photo of the front of our house.

That started me thinking and I began the task of choosing a paint color. I wanted blue but didn't want it to clash with the blue of my kitchen when the door is open.

This is with the first coat on the door. The husband and grandson thought it was cool and I should leave it just like that.

Finally finished the door. I am quite pleased with the result and think I will be happy with this color for awhile.

Halloween Table

I am so excited. I made my first place mats thanks to a tutorial from Yvonne at StoneGable. I did not have napkin rings for this table, so I folded a piece of the place mat fabric around the napkins.

When I got addicted to doing tablescapes, I promised myself (and my bank account) that I would not buy another set of flatware. I also am using my plain white dinnerware.

My yard sale candle holder doesn't look so lonely now that these animal wine glasses followed me home from TJ Maxx.

You will notice that the table has changed. I found a black table cloth for $1.50; yep, $1.50 at Wal*Mart. Also while I was out shopping the bugs and critters took over my table.

Plates: Pier 1 and TJ Maxx.
Black napkins: Ralph Lauren from TJ Maxx
Black chargers: Ross
Wine glasses: TJ Maxx
Plain goblets: Pier 1

Yard Sale Find

I found this candle holder at a yard sale this weekend. I paid $2 for it including 5 globes.

Looks better with just a coat of primer.

The finished product waiting for the rest of the Halloween things for the table.

Fall Tablescape: October 7, 2010

Granddaughter Avery helped me set this fall table.

I have to brag on the husband. I saw the placemats in this week's Target ad. I liked them because they were autumn colors but had some blue in them. I sent him with the ad and wonder of wonders: he brought the right thing home.

I found the cute little napkin rings at KMart and the napkins at Wal*Mart. Avery placed the candles and scattered the candy corn.

Finally!! Hardware on the pocket doors.

When we remodeled the old house, our "contractor" sort of left off a few things. All of our doors in this small house are pocket doors to save space. We have not had the hardware on them for the past six years. We finally got them off the "to do" list yesterday.

Got the hardware:

I ventured out to the man building to get the Dremel tool.

Found the saw blades for the Dremel.

Read the instructions and made a template for the notch to be cut in the doors.

The Dremel was not up to the job, so Rusty brought in the big man saw.

Lots of saw dust went flying.

Success. Four doors got their new hardware.
